I can’t even tell you how many times I’ve raved about this dish to people - is it dramatic to say it changed my life? Maybe that sentiment comes with eating more beans and legumes in general. In the height of the dense bean salad obsession, I implore you to try this skillet bean dish from the NYT. The sour cream and cilantro are optional but encouraged. The pickled onions in lime juice is mandatory.
